Going Gluten Free
For those that have made the transition, how was it? Did you do it in baby steps or just jump right in? Do you find it hard to stick to it while feeding your family are all you all on the journey together?
I thinking of going gluten free to see if it helps with the bloated feeling I have all the time. I'm also attempting to cut sugar out of my diet, or at least artifical sugar.

Re: Going Gluten Free
No I jumped right in. Just don't make the mistake of buying gluten free processed products. They are just as junky as their non gf counterparts.

Going Gluten Free
I just jumped right in but I suspected I had a gluten intolerance, which has since been confirmed. Keep in mind that gluten free foods often have lots of carbohydrates. Alternatives to wheat flour are not low carbohydrate. Rice flour is one of the substitutions used in pasta and breads. Also give your body time to adjust. Introduce new flours and grains, etc. slowly. I discovered the hard way that chia seeds and xantham gum are very difficult for me to digest. There are several good gluten free cook books. I love the flying apron bakery cook books. They recipes are expensive to make but they are the best bread recipes I have found. As for sticking to it-- I have no problem. Eating even small amounts of gluten now makes me very sick.

Re: Going Gluten Free
Any recs on information about going GF? Is it just a matter of reading food labels?
I was shocked when a friend called me to check if jelly was GF (because her computer was down during the hurricane), so I looked for her & it did have gluten.

Going Gluten Free
I just read food labels--wheat is listed under allergens. I try to by products that are certified gluten free. For grains quinoa, flax, corn, millet, soy, potatoes, tapioca, rice, buckwheat, arrowroot and amaranth are gluten free.
