i just did this last night with a loaf of sourdough bread that was in my fridge too stale to eat.

I sliced it into bite sized cubes, tossed it with 1/4 cup olive oil and 2 crushed garlic cloves and lots of sea salt.
i baked them on a cookie sheet for 15 minutes. then i took them out to let them sit.

they were really delicious!!!!
