Are you making it with a turkey?
If so, here is my no-fail way of making gravy:
When roasting the turkey, put two small onions cut into quarters in the bottom of the roasting pan.
When you take the turkey out of the oven, pour the gravy produced by the turkey through a strainer into a gravy separator if you have one. This will remove any onion/meat pieces from the gravy and will allow the grease to separate from the rest of the gravy.
Pour the good part of the gravy into a sauce pan. If the turkey didn't produce a lot, you can add water. Add some Gravy Master to darken it and flavor it. Bring the mixture to a boil.
While you are waiting for it to boil, mix 2 tbsp. of cornstarch with water - enough to make it a liquid.
Once the gravy mixture comes to a boil, add the cornstarch mixture small amounts at a time until you reach desired thickness - give it a minute or two at boiling after adding the cornstarch to thicken up before adding more.
