Grilled chicken

Every time I make this, I hate it. I think I need to stop using thin chicken breasts (but the thick ones freak me out for some reason lol) When other people make it, its delicious. Me, not so much! What do you do?

I hate the thin cutlets- they are too thin- I normally buy the regular cutlets and beat the heck out of them with the mallet thing. I am afraid to butterfly them myself - plus I get out my anger with the mallet... win win

Yes, you need to use the thicker ones- you can thin them out after you cook them if you don't like them that thick, but they cook better and taste juicer when they are thicker.

Marinate them well- poke holes with a fork so the marinade can penetrate the meat better.
Marinate overnight if you can. The longer, the better.

Get a meat thermometer and use that to check the temp- cook them only until done- nothing is worse than overcooked grilled chicken- it gets so dried out!

I buy regular breasts and then slice them horizontally into two thin ones. Grill about 6 minutes per side and they come out perfectly. I used to be the same and always had issues with the taste, texture, etc of grilled chicken but once I started this method it's so easy and comes out great.

Sometimes I make my own with olive oil, some balsamic and just all the spices in my cabinet- garlic powder, onion, oregano, basil, salt, pepper, just anything you like.

Other times if I am in a rush, I will use bottled salad dressing.
Asian Sesame from Kens is good if you are looking for that kind of flavor profile.
Or just an olive oil vinaigrette, zesty Italian works welll too

I like to split the breast in half horizontally. I then like to marinate them in Cardini’s Caesar Dressing for about an hour. Then I grill them up. I serve them over my Caesar salad with eggs, lettuce, pamesean, tomatoes, croutons, and bacon (all tossed with Caesar dressing).

I use the thin cutlets (I don’t like the thick breasts) and I marinate them. All summer I’ve been doing a bbq sauce/apricot marinade or a spicy marinade.

Mmm Asian Sesame sounds good.

I like to marinate them in teriyaki sauce or I've gotten a garlic parmesan sauce from Stop & Shop which is really tasty!

I've used the Buffalo Wild Wings brand but there's a generic brand that's really good, too. I just can't find it.

ETA: I add a little extra sauce after they are cooked, too, because I'm usually bad about marinating them overnight and want the extra flavor. Chat Icon

I love that one, too! Lawry's has a few good ones! Herb & White Wine is a good one, too.

Slice horizontally, pound between plastic wrap - this makes them super tender and not rubbery.

I also but the thick boneless cutlets and cut them horizontally myself.
I haven’t tried yet but recently I read if you buy the thick cutlets at Stew Leonard’s the butcher will slice them.

I use regular chicken breasts - the super thin ones dry out too fast. I marinate in Lemon juice, oregano, S&P, some onion & garlic powder. I love the grilled lemon flavor on them

I'll also just used bottled stuff too. teriyaki, BBQ, Buffalo, etc

I use chicken tenders some times as they seem to be just right. I also will go to the butcher and can have them cut as I like.
I marinate my chicken and then I usually grill on top of foil until they are almost done and then move them directly to the grill for char and marks. This helps to keep them from overcooking and drying out.
