ground chicken
Ok so i have some ground chicken and i need ideas on what to do with it for dinner! I was thinking chicken tacos but would i just make it like i would normally make a regular taco just chicken instead of beef??

I make this with ground turkey but I imagine it would work just fine with chicken:
1 package turkey 1/2 bag frozen mixed peppers (bell) diced onion and garlic to taste fat free italian dressing (1/2-2/3 small bottle)
2/3 small jar green olives egg noodles
In a large pot cook the egg noodles until about 1 minute until done. Add olives.
While noodles are cooking, brown turkey, onion, garlic. Add peppers when they are almost done to thaw.
Drain the pasta and olives. Add to turkey and peppers. Put italian dressing on to coat.
Enjoy.
It sound really odd but its a nice light meal.
Sorry no measurements - sometimes we are hungry so we use more noodles or we don't have as much dressing. DS doesn't like olives so we don't put much in for him.
The recipe was given to me by someone on a low fat, low sodium diet.

Yep! I always use ground chicken when I make tacos.

I don't use ground beef at all...I only use ground chicken. Anytime a recipe calls for ground beef, I use ground chicken...tacos, burritos, stuffed peppers, chili, meatballs!
My husband and I prefer it over red meat!

Sautee spinach, mushrooms onions, cannelini beans if you want. Season ground chicken and mix together after browning! YUMMO!

I'm not a fan of peppers so I leave it out. I don't see why you couldn't add green and yellow squash or mushrooms, or any grilled vege you might have on hand.
I hope you enjoy it. As long as the noodles are wet enough, it reheats well too.

I do tacos with ground turkey or chicken... I actually think it tastes better!
Also... stuffed peppers, meatloaf are good!
