I just made turkey and artichoke stuffed shells last night - YUM! The recipe is by Giada .
You can make turkey burgers - I make mine like my regular meat burgers... a packet of Lipton's onion soup mix, a little water, big squirt of ketchup, some Worcestershire sauce, and a little A1.
Turkey tacos are great too.. just use any taco seasoning with them... guarantee nobody will be able to tell the difference!
You can pretty much use them for any recipe as a substitute for ground beef.

My son and husband LOVE stuffed peppers with ground turkey.
I start by seeding a few peppers - 1 lb of turkey meat usually gets me 5 generously stuffed peppers with stuffing to spare. Then make the rice - 1 cup of rice/2cups of chicken stock.
After that - you soften a chopped onion and a Tablespoon or so of garlic in a little olive oil. Then I add the turkey with pepper and beef paste (or boullion) and brown it up. When it's done I add about a Tablespoon or so of Worcestersire sauce, a handful of grated Gruyere, half a bag of frozen peas and a 15 oz can of plain tomato sauce - and if there isn't enough salt at that time you can correct the seasoning. Add a little more than half the rice (more if you have carb lovers).
Put the peppers in a pan with tomato sauce on the bottom and fill them up. Top with more tomato sauce and stick them in the oven for 45 minutes. After that time I take them out, add a little more sauce and top them with grated Gruyere and stick them back in the oven for another 10-15 minutes until the cheese is melted and bubbly.

Pancetta and Turkey Meatloaf
*This is a Giada recipe and my DH and I love it.
1/2 cup plain dried bread crumbs 1/4 cup chopped flat-leaf parsley 2 large eggs, lightly beaten 2 tablespoons whole milk 1/2 cup grated Romano 1/4 cup chopped sun-dried tomatoes 3/4 teaspoon salt 3/4 teaspoon freshly ground black pepper 1 pound ground turkey, preferably dark meat 10 ounces sliced pancetta, about 10 slices 3 cups arugula, about 3 ounces 1 cup mayonnaise 4 to 6 Italian rolls Directions Preheat the oven to 375 degrees F.
In a large bowl, stir together the bread crumbs, parsley, eggs, milk, cheese, sun-dried tomatoes, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
On a baking sheet lined with parchment paper, lay out the pancetta, overlapping the slices, into a large rectangle shape. In the middle of the rectangle, place the turkey mixture, shaping into a loaf. Using the parchment paper, wrap the pancetta up and around the turkey loaf to cover completely. Squeeze the parchment-covered loaf with your hands to secure the pancetta and solidify the shape of the loaf. While still covered in parchment, bake the loaf until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let cool.
In a blender, combine the arugula and the mayonnaise and process until smooth. Store in the refrigerator until ready to serve.
To make the sandwiches, slice the rolls and spread with the arugula mayonnaise. Slice the turkey meatloaf and place on the rolls to make sandwiches.

I made lettuce wraps with it last night.
brown meat in sesame oil.
add minced onions, garlic, water chesnuts, mushrooms...
make stirfry sauce
2 tbsp of soy 2 tbsp of brown sugar 1/2 tsp of rice wine vinegar
wrap in lettuce cups.
making turkey burgers tonight.

I make an Italian Style meatloaf with an egg, Italian style breadcrumbs, a can of diced tomatoes(very well drained) and a cup of mozzarella cheese. Bake as you would any meatloaf.
I also make a "southwestern mac & cheese" a recipe I found in a weight watchers cook book.
Cook 1/2 box of elbows or similar pasta. Meanwhile, brown the turkey in a skillet, add a small diced onion and a diced green pepper (2 if you want), 1 tsp cumin, 3 TBSP chili powder 1/2 tsp salt, cook 5 minutes. Add 1 can chopped green chillies, 1 can diced tomatoes and 1/2 up water. Simmer 10-15 minutes, mix in pasta and about a cup of cheddar cheese.
Adjust the amounts of pasta and cheese to your needs and tastes. Everyone I make this for loves it. I usually serve it with tortilla chips, diced onion, sour cream...

DH doesn't eat beef too much, so any recipe that calls for ground beef I'll just substitute with turkey.

Bubble Up Pizza
1 lb ground turkey 1 16oz can tomato sauce 1/2 tsp basil 1 tsp Italian Seasoning 1 Medium Onion Diced 2 Garlic Cloves 8 oz bag shredded mozzerella 2 tubes pilsbury biscuits (they come in packs of 4) Preheat 350 Cook ground turkey in a pan into crumbles. Dice onion and put into meat. Add mniced garlic, basil and italian seasoning, sauce. Mix around. Then Take each biscuit and qtr it and throw it in. Mix around. Put in a 9x13 casserole dish (I used a stoneware dish) Spread out evenly in dish Bake 25 minutes. After 25 minutes put shredded cheese on top and bake an additional 10 minutes. Take it out and let it sit for 5 minutes
Cut into 8 rectangles. This is a W recipe and it is DELISH! We eat it alot. Good leftovers

oh turkey tacos too...made those the other night. I usually brown the meat with some diced peppers and onions to give it a little extra flavor, add a taco spice pkt and some extra chili powder, cayenne pepper and garlic and onion powder. then all the rest of the stuff that goes w/ tacos
