Hanging wall paper
What level of difficulty are we looking at? We need to peel off the paper that is up in the kitchen- and I have a suspicion that there are many more layers underneath it.
I was thinking of just putting up beadboard panelling, but not sure how it will look, floor to ceiling.
So I like this new grasscloth paper- but I wonder if that's even doable... Thoughts?

Depending if you have a "design" that needs to be matched, it's not that hard.
Your worst job is removing the old wallpaper(s) and preping the wall.
ETA: you will need to do a VERY GOOD primer on the wall prior to putting the wallpaper on. Of course, you may have to spakle the "holes" from removing the old wallpaper.
Also I learned that walls are not always straight. You need to draw a plum vertical line at the beginning so you can have the wallpaper hanging straight. So, don't just assume the corner of a wall if perfectly straight.

I want to go on the record that I HATE wallpaper!
We had it one wall in our master bedroom and then a boarder all around...ugh... it turned out that the wallpaper was only there to cover a multitude of sins - aka water damage aka...mold! Needless to say we just ripped out the sheetrock and started from scratch!
I'm very leery of wallpaper...I'd rather take it off then cover it up...you never know what's behind those walls.

eww- good point. How hard is it to get the old paper down? We bought that spray bottle of stuff that's supposed to work, but I'm sure it wont...

It's a PITA. IMO. I hate doing it. You never know what you are going to find behind it. Not only can you have more than one layer but they wall would not have been primed so you will removed a lot of the sheetrock.
Still, it is better to remove it and start from scratch than putting new wallpaper on top of old ones.
Lots of method for doing it (DIF.. which never worked for me), hot water, steamer (I never rented one though).

we did our teeny tiny bathroom with wallpaper. It looks awesome, but that is the only room I plan to wallpaper. Too too much effort. We put up paneling at the top and bottom too (thus we avoided some of the effort because our top and bottom cuts didn't have to be perfectly straight)

You're right it doesn't work! Especially if you have multiple layers. you will need a steamer. the previous owners in my house put up waterproof paper in the bathroom which is impossible to get off. What a PITA. I finally steamed and scraped it all off and then used RL sand paint. After a while I got sick of that color and did a colorwash with 2 different colors.
I also had colonial style silky wallpaper thropughout my hallway and living room so I steamed that off and did venetian plaster. I have read some of your posts and you seem pretty crafty so I think you can do this. It is an amazing look. You can get it at Aboffs in any color BM paint. You put it on with a trowel and then smooth it out with steel wool. You can make it shiny or not. Mine is shiny-I used bowling alley wax.

Venetian plaster is a great solution! It's not really my style though... Maybe though, if I try a light color... good option though- thanks!

Yep I think it would look awesome in a cool grey or blue color. Like i said you can leave it dull so it looks like suede or burnish it for shine

I just tore down wallpaper in my dining room and I have to say that it was the most tedious, annoying, hardworking process ever!!!! However, it's soooo worth it. I love my walls now!

OMG, I was just going to say the same thing. We had a wallpaper border in our master bedroom that was a pain to get off. Now we have to take down the wallpaper in the office, kitchen and hallway. Yes I said hallway!
I agree, I would much rather take it down and paint than put it up.
