Hard boiled egg ?
I make them by placing them in cold water and then bringing the water to a boil--let it boil for a few minutes then turn the stove top off and let it sit in the hot water for 10 minutes or so and then put them back in the fridge until we want to eat them. However, recently they are impossible to peel when we go to eat them --- am I doing something wrong? or does anyone have any tips?

i have read that you should put them in the cold water when they are room temperature, not straight out of the fridge.

I just watched that Cooking with Daisy show on food network yesterday.
She placed them in cold water, brought to a boil & cooked 10 min. She then drained them and ran under cold water. She filled the pot with cold water but before placing the eggs back in she cracked their shell and then left them in the cold water to cool down. She said it was much easier to get the shell off that way.
I personally havent tried it but I totally know what a PIA it is to get the shell of sometimes.
