If I have to make a cake for Saturday, I'll usually bake it Thursday night. Then decorate it on Friday night so it's ready for Saturday.

I would suggest buying the Wilton fondant if you've never worked with fondant before. It tastes about the same and is VERY easy to work with. (And if you go on A.C. Moore's website, you can usually find a coupon).

If you want to make it, I'd make it at least one day in advance so it can sit overnight. Makes it much easier to work with.

Fondant doesn't need to be refrigerated. And it actually seals the cake in, so it stays fresher longer when the fondant is on it.
After I bake the cakes and they're cooled, I wrap them in plastic wrap until I'm ready to cover them with the fondant. After the cake is all decorated, I leave it out until it's needed.

Fondant is super-convenient.

thanks for the info. i am definitely going to try it with my next cake. I have always been intimidated to try to work with fondant, but it doesn't sound that bad!

Ditto to everything, but make sure you DONT put it in the refrigerator at all once on the cake - when you take it out it can sweat and sometimes ruin the cake.
