Have to share this: Lasagna Soup recipe!
I made this soup because DH love lasagna and I love soup, so I figured I'd give this a shot. It's SO DANG GOOD. Perfect for a chilly day.
I tweaked it a little; used soy crumbles in place of sausage and no onions because I hate them. Added spinach in place of the onions, along with a few mushrooms that I had left in the fridge.
As noted in the recipe, best to make the pasta on the side if you anticipate leftovers, so it doesn't soak up all of the broth. I do this with most soups that I add pasta or rice to.
