Re: Healthy (and Simple) Guacamole Recipe?
May be too late for this but I have a guacamole recipe from a ww cookbook. I've never made it but it says:
Though it's as creamy and tasty as restaurant guac, no one will ever guess there are canned white beans in here to lighten the otherwise high-fat content of the avocado.
1/2 red onion, minced 3 Tbsp fresh lime juice 1 (15oz) can white beans, rinsed and drained 1 medium avocado peeled and chopped 1 plum tomato, finely diced 2 Tbsp cliantro 1 garlic clove, minced 1/2 tsp salt 1/4-1/2 tsp hot pepper sauce 1/4 tsp ground cumin
1. Combine the onion and lime juice in a small bowl, let stand 15 min
2. Puree the beans and avocado in a food processor. Add the tomato, cilantro, garlic, salt, hot pepper, cumin and the onion mixture; pulse until blended. Transfer to a serving dish and serve at once.
Per serving (about 1/2 cup) 112 Cal 5g Fat 1g Sat Fat 0 g Trans Fat 0 mg Chol 281 mg Sod 15g Carb 6g Fib 4g Prot
