How did you defrost the top of wedding cake (UPDATE!!)
How many days should it be in the fridge? Any tips?
UPDATE: Well, we celebrated our 1 year yesturday and the CAKE WAS AMAZING!!!! I had it wrapped in a million layers of saran wrap and froze it the morning after the wedding. I put in in the fridge Friday. The chocolate cake with chocolate truffle filling tasted even better than I remembered (this year I was sober ) And since I have not had chocolate since getting pregnant it was a TREAT!!!! This was the original cake
You can see how it looks a year later...

I took it out that AM and it was ready for that nite.
It was actually good.

Great, thanks! It wa ssooooooooooo good the first time, I hope it tastes good 1 year later....it's wrapped in about a million layers of saran wrap.

Just put it in the fridge a few days prior...and it was very yummy, which made me sooo happy b/c I only ate one bite our wedding day

Yeah, we did the 3 day prior thing too.
But ours was nasty! I wasn't looking forward to the re-tasting a year later..
We ended up eating the anniversary cake the Garden City Hotel gave us..

be careful!
We just went to my friends house sunday for their 1 year anni- and we ate the top of their cake- and i was sick all night long throwing up- it was because they had whip cream on their cake.
we did this for our anniversary and i was fine- we had butter cream frosting!

Good to know! Ours was butter cream. I wrapped and froze it the very next morning.

We took ours out of the freezer and put it in the fridge the day before our anniversary, and then took it out of the fridge and set it on the counter about 2 hours before we were going to eat it - it came out great!

We took ours out on the morning of our anniversary and let it sit on the counter for the day. By the time we ate it, it was fully defrosted and was SO good!! Now it's in the fridge and I think it's time to chuck it!

We took ours out three days before. We shared it with my brother and his family. It was good, just not as great as it was on our wedding day.

We took it out of the freezer and let it sit for about an hour. We actually ate ours frozen....it was almost like eating ice ceam cake. It was really good!!

Gee, I wish I could tell you but my grandma and mom ate ours while we were on our honeymoon. My parents brought the cake back to their house and my mom AND grandma dove in...Cubans don't know about the tradition of eating it on the 1st anniversary. (OK, MY Cubans didn't know it)

That is really funny because my parents did this to my sister. They brought it home and served it to their friends the next day with espresso! One year later my sister went to get it and my mother felt so bad! I guess Italians don't know the tradition either!
