How do you cook a frozen turkey breast?

I just got one from Shop Rite for free, and I would love to make it this week....never made one before. Any suggestions?

Defrost it, obviously! Lol. Then I rinse it, dry it, and put it on top of a few quartered, onions, celery stalks, and a quartered apple. Brush the turkey breast with olive oil, and then rub on seasonings. I use 1.5 TB lemon pepper, 1.5 tsp onion powder, 1.5 tsp garlic powder, 1 tsp dry robbed sage, and 1 tsp paprika (mix it up in a bowl and rub all over breast and in cavity. Then add some fat free, low sodium chicken broth and some white wine to the bottom of the pan. Roast in oven at 325 degrees until done (usually takes 2.5 to 3 hours depending on the size). Let rest before carving.

You can make a delicious gravy with the liquid at bottom if pan, after you strain it. You can let it cool and then remove fat, if you want. Then, in a saucepan, melt 2 tb butter and add 2 tb flour, whisking together. Then add a cup of pan liquid, and ring to boil to thicken, then, let simmer. I like to add a splash more white wine. If you want to make more gravy, just remember touse 2 TB flour and butter per cup of liquid.

This recipe is pretty easy and makes a very flavorful turkey breast. I always get rave reviews on holidays and whenever I make it!

Thanks! I have actually seen recipes that use frozen breasts too. I will try these suggestions!
