How do you make vegetable lasagna?
I'm Italian. We use pasta. But I bought this huge pretty eggplant from uncle guissepie and I was thinking of doing a vegetable lasagna. Do I just cut the egg plant lengthwise and have that replace the noodles? Do I use ricotta and mozzarella and sauce as normal? To me that would be eggplant parm, no?

I use noodles for vegetarian lasagna.. but I do make a vegetable napoleon with layered thinly sliced eggplant or zucchini! You could also do an eggplant strata.

Typically i use zucchini....
But you mentioned you have an eggplant..
I just made this dish a few days ago... It was yummy and from Skinny Taste!
