How many days should we stay at Disney?

For as many days as you can afford!!
I LOOOOVE Disney, I've yet to go with my DD, but when we went before we had a child we always stayed for around 10 days, sometimes longer. There is just SO much to do between all the Disney Parks and Universal and then Downtown Disney and the water parks that we always wanted to make sure we had time to hit up everything without feeling rushed.
How long you stay really depends on how many parks you want to see. If you're not interested in seeing ALL of the parks then you don't need such a long trip. With your young kids I wouldn't miss Magic Kingdom, MGM, and Animal Kingdom for sure!! I went to Disney a lot as a kid and I didn't really appreciate Epcot until I was a little older.
Have a great trip for however long you decide to be there!!

We have been with DD several times. Each time we do at least 5 days. One day at each park, then an off day usually in the middle of the trip. Each park has something to offer, even for the little ones. The more days you do will give you more of an opportunity to have down time to relax and hang by the pool.

We just came back with a 4yo and 2.5yo. We did 6 nights/7 days and for us it was perfect. They were whooped by the end of it - I don't know that their tired selves could have handled more - but we did everything we wanted to without running out of things in that time frame.

we just did a 2 week trip. We spent a few nights in Vero Beach, at the Disney resort, because we were visiting a family member there. Then we headed to the Disney area and got 10 day park hoppers. My kids were 16 months (twins) and 3.5 years. We had such great time. I think you can do everything in 5 days but we had the vaca time and needed a break from cold NY!

We are staying a week when we go with DS who will be 22 months. (6 nights). I have heard of people going For less than that too but we like to spread out our time at the parks and a have break day in the middle if week to just sit by the pool or do something more relaxing.

I agree with above posters. Definitely for as many nights as you can afford or have to take. We usually go for 8-10 days. Disneyworld is huge and even in 8-10 days you can't do everything. But when you go for a longer time you can be more relaxed in your schedule and work in more time to do things like sleep in and do a character breakfast, spend some time at the pool etc. If you only have say 5 days or so you will want to be up early and at the parks as much as possible to see as much as you can - so it is a bit more tiring.
Of course if you take a shorter trip it just gives you an excuse to go back and do the things you missed.

I agree with as long as you can afford!
We have done as few as 4 nights (although we're about to do one night after a cruise) and as many as 8 nights, usually 7.
The more time you have, the more you can see and the slower pace you can take. if you have a lot of time, you won't mind sleeping in one or two days, or going to bed early. You'll still be able to see what you need. I think ideally, at least 7 nights is needed to see the highlights of everything without going too nuts. I'm just talking about Disney World. If you're adding Universal or Sea World, I feel you need to even add time. We don't really do Uni and Sea World. There's more than enough at Disney World.

We are doing 8 days, 7 nights thanks to my parents' timeshare. If you are going to all 4 parks, 1 a day, you should go for at least 6 days: 1 to arrive, 4 for the parks, and 1 to go. If you can stay longer, that's even better because you can go to downtown disney and also relax!

We're going next month and doing 5nights/6days. I would have done longer but DH thinks that's long enough for our first real trip with all 3 DD's.
