A place setting takes 16-24" and if food is being passed around family style, allowances need to be made for setting the serving containers between the place setting. 30" spacing allows about 10" of table room between diners, adequate for modest serving bowls.
chairs should be space about 24-30" on center, normally a good rule of thumb... but you also have to consider the size of your guest and any accommodations they may need....
are there any:
children?
wheelchairs?
infants?
etc....
30 X 72 table can seat 6 adults
30 X 96 seats 8
