I bought a butternut squash today but got home and realized I don't know how to cook it! Please help or dh will have very little for dinner!
I'm a dope. I don't really know how to cook at all but maybe someone on here will be kind enough to tell me the simplest way to cook it. I can't call my inlaws for this one b/c I always have dumb arse questions like this. They are going to think their son married a freak! thanks for the help in advance! xo

I usually cut it into little chunks, and toss the chunks in a little oil, salt and pepper and then bake it in the oven on a cookie sheet! It's so good!

Here is a nice easy recipe for roasted butternut squash with balsamic vinegar. Yum!!!

Until it's tender when you put a knife/fork through it.
I cut mine and steam or boil it.
You could also cut in half and put in oven on a cookie sheet with some butter.

until it's soft....or even easier you can just cut it in 1/2 lengthwise and pop it in the oven that way...and scrape it out when it's done...

Just made some yesterday! YUM!
Creamy (curried) Butternut Squash Soup 1 butternut squash (about 1 3/4 lbs), peeled and cut in 2 inch cubes. 4 1/2 cups vegetable stock 1/2 cup blanched almonds 1 1/2 tsp. curry powder 1/2 tsp. sea salt 1/8 tsp. black pepper Put squash cubes and 3 cups of stock in large pot. Bring to simmer over med. heat, then reduce heat, cover and cook until squash is tender, 15-20 min. Remove from heat and let squash cool in cooking water. Put the blanched almonds and the remaining 1 1/2 cups of stock into a blender. Blend until smooth, about 1 minute. Add the cooked squash, curry, salt and pepper. Blend until smooth. Add the squash mixture to the pot of cooking liquid and bring just to a simmer over med. heat. Serve hot. *This is the original recipe. To make it thicker, I cook the squash in the 3 cups and then use 1 1/2 cups of THAT cooking liquid to blend with the almonds, instead of "the remaining 1 1/2 cups of stock." **If you want less curry or spice, I'd reduce the amount it calls for. You can really taste it in the original. ***Blanched almonds are without the skins. They look white in the bag or container and are usually cut up in some way. It usually says right on it that they are blanched. ****This is totally vegan-the blended almonds make their own type of milk, which makes it creamier.

Or once its soft you could broil it for just a few seconds and it gets so crispy and good. Now I want it!!!

It's pretty easy to make. I just started this fall. You slice it down the middle lengthwise and scoop out the seeds. Bake the two pieces with the flesh side down for 50 minutes or until tender. And then you can flip the sides over put some butter and maple syrup over them and put them back in for about 5 minutes. When it's done you just scoop it out, it's almost a puree and serve yum

I cut mine up in cubes, toss in a few apple cubes, some brown sugar, butter, flour, and cinnamon. YUUMMM
