I made THE BEST crockpot meatloaf tonight. . .recipe inside
DH couldn't stop talking about it!!!
I made some substitutes- I marked in bold
SLOW COOKER MEATLOAF
2 pounds ground beef I used meatloaf mix
2 eggs, lightly beaten
1 sleeve saltine crackers, crushed - I used triscuits
¾ cup ketchup + extra for top
1 cup chopped onion I used frozen
1 cup chopped bell pepper I used frozen mixed & chopped in chpper
1 teaspoon salt
1 teaspoon pepper
½ teaspoon garlic powder
1 package onion soup mix I made my own b/c DH can't have the packets, it has sugar in it
½ cup milk I also completely forgot about this ingredient, until I just saw it now LOL
2 tablespoons Worcestershire sauce I left this out b/c I had none 
In a medium bowl, combine all ingredients and mix to combine. Spray a slow cooker with cooking spray or line with disposable liner, and place meat mixture inside forming a loaf (this will not be touching the sides of the pot).
Cover generously with ketchup and cook on low setting for about 8 hours.
You may add potatoes, carrots and onions, by tossing them with ¼ cup olive oil and seasoning salt, if desired. I used sweet potatoes & just carrots, with EVOO & seasoning salt
IT WAS SO FREAKIN GOOD!!!!!!!!!!!!!!!!!!

Oooh, can you tell me how you made your own onion soup mix?
I can't have it bc it has MSG in it and I get killer migraines. But so many recipes call for it.

I thought you always need some kind of liquid in a crock pot, otherwise it burns... was the juice from the meat enough?

it didn't burn, I assume b/c meatloaf mix is pretty fatty, there was enough there. PLUS the EVOO from the potatoes & carrots. I wouldn't make it without the milk again just to be safe.

Oooh, can you tell me how you made your own onion soup mix?

I did this one:
* 8 teaspoons dried onion flakes
* 1 1/2 teaspoons dried parsley
* 1 teaspoon onion powder
* 1 teaspoon turmeric didn't have this one but substituted with dry mustard
* 1/2 teaspoon celery seed
* 1/2 teaspoon salt
* 1/2 teaspoon sugar
* 1/4 teaspoon ground pepper

interesting I have been making the meatloaf recipe on the Lipton soup mix box for YEARS and it is so delish..I will def have to try it in the crock pot now! Never would have thought!

I made this! Well, I changed a few little things but DH LOVED IT! THANK YOU SO MUCH for posting this. I never knew you could put raw ground beef in the crockpot. I've only seen recipes for beef precooked.

Made it tonight. DH loved it and can't believe I never tried meatloaf in the CP before. Now I want to try my recipe next time in it!
BTW, I never make a 2lb meatloaf, so i used 1pm lean chopped meat, 1pm lean ground chicken & you would never have noticed.
