whoooa...and i can see why rainbow cookies are expensive b/c ALMOND PASTE ISNT CHEAP. holy shi** i spent over $10 for 2 (8oz) cans at shoprite. and the almond paste in the log was $6.00 each.

I've never made the cake but I make the cookies. So delish!
fyi: I use almond filling instead of almond paste...just my preference. No grating or anything, just scoop it out of the can

Yes, I got it at Waldbaum's - it came in 7oz tubs. its in the baking section. I want to make it again, it was sooooo good!

Grocery stores usually have almond paste right by the extracts in the baking section! I Googled an image of it before I got it the first time a few years ago .
And Marie, that cake looks amazing!!! I know what I'm making next time I have to bake for someone!!

Question for you Marie--what kind of food coloring do you use to make the colors of your cake so vibrant? I always feel like my rainbow cookies look like a dull color in comparison to the ones they sell in the store (though they still taste great!). Should I just be adding more coloring, or do you use a specific brand?

If you know anyone that has access to Restaurant Depot its MUCH cheaper there!

I used the wilton food coloring, they sell it at michael's and it has no taste - I feel like the ones they sell at the food store add a funny taste.
I want to make this cake again - is was soooo good!

It looks fantastic! Great job!
I just made this again for Christmas and bought almond filling by accident and it worked just fine in place of the almond paste AND almond extract.
