Something that will be able to sit out for hours as not everyone will come at the same time.

You can do a tuscan type spread - olives, radishes with coarse salt, some flat breads and good italian bread slices with a plate of dipping oil. Maybe a nice spray of grapes along with it. You can have some cheese too - but you'd want to keep that chilled for the most part.

Roasted Shrimp Cocktail is nice - it's not meant to be served cold but I do think the cocktail sauce is better cold.

I don't know.. there isn't much I'd leave 'out' for any length of time in the summer. I'm not much help!

I was having the same issue - I opted for swedish/appetizer meatballs.

Maybe a fruit salad?

Or just a regular salad with oil and vinegar on the side?

Or maybe a pasta salad made with orzo, veggies or tomato and basil and just use an italian dressing.

I'd skip anything cheese if it's gonna be out for hours.

If you belong to Costco, they have an amazing baked bread made with garlic. It is fantastic with their refridgerated bruschetta mix and Trader Joes sells an olive tapenade that goes really well too. It's always a hit at our BBQ and so easy to do!
