write a letter unless you know for a fact that a decision is being made immediately. Here's my suggestion:
Dear XXX,
Thank you for your time on XXX. It was a pleasure meeting you and learning more about (insert position.) Now you can give a sentence or two about why you'd be a good fit - something that isn't already on your resume.

ETA: invest in some nice cards. don't send something that looks cheap. JMO.
