Bella is:
Colombian, English, Austrian, Irish, Italian, and Welsh.
She looks so much like me, I find it weird to put "hispanic" on any forms....but she is.

It depends on how you define "ethnicity" in our case.
DH's father's family has been here since Civil War Times. His mother's family almost as long. I am third generation American on my mother's side, second generation on my Dad's side.
Our children are full-blooded Americans and that is how DH and I consider ourselves. We have ZERO ties to the countries of our ancestors - no affiliations whatsoever and I will, to the day I die, consider myself American ONLY. How my children choose to affiliate is their choice, but I am AMERICAN in terms of nationality.
In terms of "ethnicity" or culture, ours is based SOLELY in religion. If someone were to ask us our ethnicity (as if they couldn't guess within seconds ). Id say it was Jewish.

I am Latina but a Mutt as well:
50% Ecuadorean (Colombian and Spanish mixed in there)
50% Mexican (My dad was born here but his parents were born in Mexico. The kicker...his grand parents were from Greece, Portugal, Italy and Spain)

DS and DD - 50% Italian (DH is 100% Italian) and 50% mutt - I am allll different "breeds" including German, Russian, Polish, Romanian, Hungarian, Latvian, and Norwegian.
