Italian cookies/pastries

Anyone know how to make or have recipes for some traditional cookies or pastries like pignoli cookies, rainbow,?

I want to start baking them instead of buying from an Italian bakery.

My Mom makes the most delicious pignoli cookies!! I have to double check the recipe, but they are so simple to make!

1 lb Almond Paste
1 lb Sugar
3 (or 4) Egg Whites - I'd have to check on this!

You mix it all together, scoop the cookies and roll them in pignoli nuts and bake!

I also have to check the temp.time. I will update later!

Both recipes call for canned almond paste, but I have found fresh (for a great price!) at Guinta's Meat Farms if you have one by you.
