I would. You never know- no reason to leave a perfectly wonderful bottle of bubbly undrunk. But you should make the drinking it an occasion. Like- what can you do to commemorate drinking a $250 bottle of champagne? The last time I did that, I drank it in a hot tub. Because that's just fancy.

SO funny- we have a bottle of Dom that we got from our Realtor when we closed on our house. It still hasn't been opened since I was preggos at the time.
When should we open it?

I went out last night with my girlfriends...we drank cheap plonk, but we still spent about $100 on booze...prosecco mainly.
A really good friends Hen party. That merits some good plonk.

DH was doing an install and the home owner gave him a bottle of Robert Mondavi Reserve Cabernet Sauvignon.(I forgot the year, I thin it was 2003) It reatails anywhere from $125 - $145. I said I would crack that open for a special occassion. Well I couldnt think of anything and just brought the bottle over to a friends house and we celebrated girls day. We watched movies and just drank.
So no special occassion required to crack open that bubbly. Just open it, sit back and enjoy
