Just wanted to share my low carb breakfast idea!
So I just stumbled upon this, but it is sooo good!
Two eggs (could use eggbeaters too)
A few spoonfuls of rinsed black beans
A few spoonfuls of salsa
A sprinkling of shreaded cheddar cheese
mix all in the same bowl and scramble. So yummy and filling!

sounds more like a low fat high fiber breakfast to me.

Definitely rinse the beans in a strainer first. I would think that the bean sauce may make the eggs watery.
