Lent & Friday dinner???
Anyone have suggestions? I don't want pizza and usually at lunch I will have tuna salad. I guess I am just looking for new ideas please share!

Last week I made fried shrimp and fried scallops and made a fra diavolo sauce with spaghetti. It was AMAZING!

Friday is usually the only night of the week I don't cook....but there are a ton of veggie and fish options out there
SHRIMP SANTORINI (eat this with toasted flat bread YUM!)
24 raw shrimp (about 1 1/2 lb.) 3 tbsp. lemon juice 1/4 c. olive oil 1 c. chopped scallions 1/2 c. chopped celery 1/2 c. minced parsley 3 cloves crushed garlic 2 c. chopped plum tomatoes 1/2 c. chicken broth 1/2 c. dry white wine Salt and pepper to taste 1/2 tsp. oregano 1 c. Feta cheese, crumbled
Wash shrimp. Remove shells and devine. Place shrimp in a bowl, sprinkle with lemon juice and set aside. Heat oil in skillet and saute scallions, celery, parsley and garlic until tender. Add tomatoes and bring to boil. Simmer for 15 minutes, stirring occasionally then add broth, wine, salt, and pepper and continue to simmer for 5 minutes. Spoon 1/2 the sauce into shallow ovenproof casserole dish. Add shrimp, sprinkle with oregano and spoon over remaining sauce. Sprinkle Feta cheese over top. Bake at 400 degrees for 15 minutes or until cheese melts.

salmon teryaki
I mix soy sauce, teriyaki sauce, pineapple juice, garlic, pepper, and scallions (about a cup)...pour half on to salmon filet and roast in the over
I use the other half to sautee, bamboo shoots, water chestnuts, chinese eggplant and chinese greens (cabbage, bok choy etc) in a wok or skillet.
then I cook rice noodles according to the directions, and toss the cooked veggies with the rice noodle, serve the salmon on top

Tonight I am making pasta with Broccoli Rabe and garlic and oil. I will probably make some shrimp as well.

Tonight I'm going to do Shrimp in a cajun alfredo sauce with whole wheat pasta, zucchini and yellow squash...a semi-rerun of our mardi gras dinner b/c it was so good!

potato pancakes with apple sauce
oh man, I loved lent as a kid.... but it totally doesn't fit in with the whole 'friday is for suffering for your sins' thing... it's a yummy and decadent dinner!
