We always get top round, but thats only b/c I have never noticed another cut. It grills nicely.

get top round. Much tender than a shoulder cut! A little more expensive, but worth it.

Re: London Broil Cut ?
London Broil is NOT flank steak. Flank Steak is a completely different cut of meat.

Top round is leaner, but also tender.
The shoulder comes from the top of the cow's forleg, it is part of the chuck. Chuck is fattier than the round.
Flank is belly muscle. Skirt steak is cut between the diaphragm and the ribs.

Well if we're being really technical, it's actually a method of cooking and not a particular cut
I prefer using flank steak for that cooking method
