Looking for a healthy vege side dish
I have a potluck this weekend and I just started Jenny Craig. So I'm looking to make a yummy healthy vege side dish. Anyone have any ideas??

Roasted Brussel sprouts-just toss in a bit of olive oil, kosher salt and pepper and roast at 400 for about 30 mins
Sauteed Kale-take the big stems off, tear into pieces, sautee with fresh garlic, salt pepper and a little olive oil

Vegetable Barley Casserole
2 tsp canola oil 1 small uncooked onion(s), chopped 1 clove(s) (medium) garlic clove(s), minced 2 cup(s) frozen corn kernels, thawed and drained 3 cup(s) uncooked Swiss chard, thick stems removed, coarsely chopped 14 1/2 oz canned diced tomatoes, with chilies, well-drained 2 cup(s) cooked barley, quick-cooking recommended 1/4 tsp Cumin seeds 1/4 tsp dried oregano, crushed 1/2 tsp table salt 1/4 tsp black pepper, freshly ground 2 spray(s) cooking spray 1/2 cup(s) low-fat shredded Cheddar cheese, sharp-variety recommended
Directions:
Preheat oven to 350ºF.
Heat oil in very large nonstick skillet over medium heat. Add onion, garlic, corn and Swiss chard; cook, stirring frequently, until onion is translucent and Swiss chard is tender, about 5 minutes. Stir in tomatoes, barley, cumin, oregano, salt and pepper; heat through.
Coat a 2 1/2- to 3-quart baking dish with cooking spray. Spoon barley mixture into prepared dish in an even layer; sprinkle with cheese. Bake until cheese melts and mixture is hot, about 25 to 30 minutes. Remove from oven and let stand for 5 minutes

Maple Glazed Brussel Sprouts with Canadian Bacon
About 2 lbs of brussel sprouts, cleaned and halved.
3-4 slices of canadian bacon, cut into small slivers.
Toss with 1 tbsp of EVOO, salt and fresh black pepper.
Arrange on a baking sheet sprayed with Pam (I also line with parchement paper because it makes it easier to slide them off) and roast in a 425 oven for about 10-15 minutes.
Slide off of the pan into a bowl and toss with 2 tablespoons of real maple syrup.
Put in a baking dish and bake for another 5 minutes.

Two of my FAVORITES!
Another big fave in our house is squash. We put a little olive oil in a deep pan and then stir in a chopped onion and some minced garlic. Add 1 cut up yellow squash and 1 cut up zucchini. When the squash starts to soften add a large can of peeled tomatoes (drain first). Add a few fresh basil leaves and some salt and pepper. Let it simmer for a few and then you can eat it straight as a side or serve over rice, pasta, noodles, etc..
