Looking for beans recipes.

I want to add more beans to our regular diet. Please point me in the direction of some recipes. I make chili and also a white bean/sausage/escarole with pasta dish but that's really it. Any suggestions?

You can serve black beans with different mexican foods.
I throw red kidney beans and cilantro into white rice which is yummy!
Pasta with spinach, garlic, and cannellini beans.
Soup... minestrone, fagioli, etc (can serve with panini for a good dinner!)

you can make hummus and serve it as an appetizer or a sandwich spread

my mother makes pasta with kidney beans. she sautes garlic in a pan then adds a can or two of kidney beans with the liquid and simmers it until hot. she serves it over pasta.

Beans and Macaroni

Sautee 4 cloves of sliced garlic in 4 tbs olive oil.
Pour in 1 can White Cannelinni Beans with liquid
Season with Salt, Pepper, Red Pepper Flakes, Parley, Garlic Powder
Pour of cooked Spaghetti
Sprinkle with Parm Cheese

optional additions: sliced grilled chicken breast, escarole, swiss chard, spinach, zuchini, yellow squash, green peas, sugar snap peas, eggplant ... if I use one of the additions, I usually use rigatoni or penne.

Instead of potato or rice, I will make beans as my carb side dish.

"spanish" Red Beans:
Sautee thinly sliced onion
add can of Kidney Beans
Season with Adobo & 1 packet Sazon
optional: 1/2 jar of salsa, cubes of left over ham


"Italian" White Beans
Sautee Garlic
add can of Canellinni beans
Season with garlic powder, oregano, basil, salt and pepper
optional: can of diced tomatos drained of juice


Chick Pea Salad
1 can of Chick Peas Drained
1/2 thinly sliced red onion
Season with olive oil, lemon juice, salt, pepper and garlic powder
optional: you can substitute lemon juice for white vinegar. Not sure which one I like better!


If you can find an easy 'cheaters' recipe for Cassoulet, it is a great meal ... I have used italian sausage, diced chicken - it comes out OK and is a full meal.
