East Wind Inn and Spa in Wading River (Long Island) is great. They definitely have yoga, pilates, and Zumba classes. They also are right by the wineries. This could be a fun GF trip. Not so sure about health food though. I am sure they could accommodate you.

if you want to really get away, i love love LOVE The Lodge at Woodloch spa in pennsylvania. Amazing. Food is phenomenal as well. Lots to do (or not do) and it's a very serene setting.

In Westbury, LI there is the Viana Hotel and Spa. Just went with 6 girls for a bachalorette party two weekends ago. It was great!
