Looking for ideas - This chicken recipe
I am thinking about taking a thin sliced boneless and skinless chicken breast, and wrapping it around a WW Mozzarella cheese stick. (I am on Weight watchers)
My question is, should I put it in aluminum foil, pour FF Italian dressing over it, and wrap it up? I am thinking of baking it on 350 for 20 to 30 minutes.
Can I add anything else to the chicken, like potatoes or veggies or should I bake alone?
Has anyone tried this? Instead of the Italian dressing, should I try some other type of spices or marinade?
Thanks, Scott

I am thinking maybe the dry Italian dressing mix packet from Good Seasons? You can moisten the chicken with a little water and roll it in the mix???

Re: Looking for ideas - This chicken recipe
Maybe put it in a baking dish seam side down, pour tomatoe/pasta sauce over and bake.
If you have points/calories - you can add a slice of deli ham and make a chicken cordon bleu type thing. I use a little gray poupon/dijion mustard as the glue.
Maybe you could get a big portabella cap, cut up the chicken - mix in some tomatoes and spinach - put into the mush cap, top with cheese and bake?
Not on WW so no idea about points/calories.
But that mushroom thing sounds good - I'm going to try it myself - thanks!

I would do the following...
I would use PAM and sautee garlic and add chopped spinach - season with salt & pepper. I would roughly chop the mozarella stick. I would then roll it up.
I would use FF Italian Dressing to baste it then bake.

I used to make something like this. I seasoned it with oregano, salt, pepper, garlic powder etc. Whatever u like - Then I rolled up the mozz stick with the thin chicken cutlet stick and then I put a little bit of sauce on top :)

Re: Looking for ideas - This chicken recipe
It was good. I should of browned it before putting it in the oven, that would of made it better.
I took the chicken cutlet and seasoned it with salt and pepper and crushed garlic.
I sliced up the ww cheese and also some orange bell pepper
I rolled the chicken around the cheese and the pepper, Put tin foil in a baking dish, placed the chicken in the foil, and poured FF italian dressing on it.
I then wrapped it up and baked it for 20 minutes at 350. I should of cooked it longer because it wasnt fully done.
I then took it out and browned it in a frying pan to get the outside crispy.
I made sauteed spinach with garlic, oil and lemon and also a sweet potato, and carrots
It was good Scott
