Low fat/low cholesterol cake recipe? Does it exist?
Anyone have a recipe for a low fat cake? Fat free even possibly?? I know, pretty impossible??
My moms birthday is this weekend and she has gallbladder and cholesterol issues. She cant eat anything with high fat content or cholesterol. I want to bake her a cake but have no idea what kind? I know angel food cake is usually the way to go, but she hates it.
Any ideas?? TIA.

for starters, you can replace any oil in a cake recipe with either apple sauce or baby food. (swap out for equal parts)
I usually use apple sauce for a golden/vanilla/white cake and baby plums or other dark fruit for a chocolate cake.
that in and of itself will take the fat content down...eggs are the other issue. I am not sure how she does with eggs, but most recipes don't call for more than 2 or 3 which shouldn't raise the fat or cholesterol level of a slice of cake up TOO high if you use the oil substitutions above.
icing is the biggest culprit usually...with tons of butter/cream cheese etc.
this icing made with egg whites, water, and sugar should not be high on either the fat or cholesterol scale at all.
will you bake the cake from scratch or use a box mix? I am pretty sure the box mixes (Duncan Hines) have a low fat/cholerestol version that recommend the applesauce substitution.

Angel food cake is low fat - not sure about the cholesterol.
I'll usually get an angel food cake from the supermarket bakery - slice it horizontally into 3 pieces. Layer in some fresh strawberries and Cool Whip Free to make a low-fat strawberry shortcake.
ETA: My bad - I just saw that she hates angelfood! SORRY! I dont know where my brain is these days...

I always use a normal cake mix but use 'egg beaters' instead of eggs, and I use applesauce instead of oil and the cakes always come out super moist and nobody knows the difference!

also, another lowfat icing i make is:
lowfat/partskim ricotta cheese with sugar and cinnamon. It's great. You can add as little or as much sugar & cinnamon as you like. Just don't leave it on the cake too long as it starts to evaporate. I also use it as a filling.
