Made a really delicious vegetarian AND meat dish
Before I started, I chopped a yellow onion and 3 cloves of garlic.
I started with red lentil dahl. In a pot, I sauteed 3/4 of the onion and half of the garlic. After it was 'clear' I added 1 cup of red lentils. Stirred around. Then I added 1 cup of vegetable broth, 2 cups of water, 1 small can of diced tomatoes (including the juice). Mixed around. Then I added salt and pepper, about 3/4 tsp of turmeric, 3/4 tsp of cumin and 3/4 tsp of ground ginger. Covered with a lid and let cook and simmer. About 25 minutes in all.
Started a pot of rice.
Now for the chicken. I sliced a chicken breast and mixed it in a bowl with salt and pepper and curry (start easy...curry is strong). In a pan, I sauteed in evoo the rest of the onion and garlic. After about 4 minutes, I added in chicken. I cooked it for about 5 minutes, then added 1 cup of chicken broth ( you can use veg. broth) and let the broth boil. I then tossed in half a bag of steamfresh broccoli (so easy that way...saved the rest for the vegetarian plate). Let it cook so that most of the broth cooked down.
Served the rice, dahl and chicken to the DH, had the rice, dahl and broccoli for myself.
Drizzled a bit of melted butter on the dahl and rice before serving.
Done.
