Recipe calls to simmer it in beef stock, which I do not have. I have chicken stock & vegetable stock on hand. Which would you think is tastier to use?

Personally, I don't think it will matter... Mostly I lean toward Chicken Stock.... but when I do use the veggie stock, I'll add in some red wine as well for a boost in flavor.
