Making vodka sauce thicker?
My vodka sauce tends to come out watery, no matter what I do. I cook up onion and garlic. Add a can of stewed tomatoes and cook for 15 minutes. Add seasonings. Add 1/2 to 3/4 cup vodka. Cook until almost gone. Add the heavy cream, bring to a boil and then let simmer. What am I doing wrong? How do you make your vodka sauce thick and/or creamy?

I actually add the cream after the vodka but before the tomatoes. My sauce usually comes out thick. I also add Parmesan cheese to the sauce.

I cook garlic in EVOO until soft.. then stir in 1 28 ounce can of crushed tomatoes, chopped fresh basil, salt and pepper - then simmer for 15 minutes. Then I put in 1/4 cup vodka and simmer for 15 more minutes. Then I stir in heavy cream - I buy 1 pint, then put in as much as I think... until it gets to the color I want. Then simmer 10 more minutes. Mine isn't watery!

You should add the Vodka right after the tomatoes and simmer for about 5 minutes (so it has time to burn the alcohol off). Add the cream and simmer, never let then cream boil (it can break). Add the cheese off heat. if you want to make it thicker, mix a little corn starch to cold milk then add to the sauce while it it simmering, whisking constantly. DO NOT ADD CORNSTARCH DIRECTLY TO SAUCE. You will get lumps and it will ruin the sauce.

2 questions, are you burning off your vodka? that thins it out.
Also- try tomato puree instead of stewed tomatoes!!

Thanks for the suggestions everyone. I do burn the vodka off. Last night I took the sauce off the heat and let it sit for a couple of minutes before mixing it with the pasta and it was the perfect consistency.

Mine always seems almost too thick, I also have parm cheese in mine and it uses tomato paste.
