Re: meals for lent
DH is Jewish, so I only have to worry about me. I will eat pasta with veggies and ricotta, breakfast for dinner, pizza. Yogurt, granola and fruit. A bowl of cereal and fruit works for me too.

Re: meals for lent
Not sure if your into Mediterranean foods, but lot are vegetarian.
- Spinach Pie w/ greek salad - Veggie kebabs with rice and yogurt sauce - Hummus with Pita bread and Tabbouleh (parsely salad)
Fyi...most supermarkets have these pre-made already and Trader Joes.

This is what we usually do. DH hates fish so I'll have a tuna salad if he works late.

Salmon, fish sticks Mac n cheese, pizza, vegetable omelets.
We bake aldente spaghetti and rice mixed together seasoned with olive oil salt and pepper and grated Parmesan cheese. Baked on a cookie sheet until top is golden crunchy.
We also make rice balls stuffed with marinara sauce, peas and cheese.
