Re: Memorial Day Cookout/welcome home party
I would go with the chimichurri and the BBQ chicken. The chimichurri you can probably make the night before and the BBQ chicken you can season/marinate overnight too. Less for you to do the day of. Everything else that you were debating seems like more work.
I am making:
Appt. Clam dip 3 cheese dip if I can find it
main meal pulled pork slow cooked baby back ribs burgers hotdogs grilled chicken
sides mixed green salad grilled veggies (I think) grilled corn stringbean salad
Dessert Coconut vanilla bean cupcakes walnut cups
I am probably going to make a pitcher or 2 of sangria. I have been wanting to try a brazilian drink that is like a mojioto except you use sugar cane rum, lime (instead of mint) and club soda. It begins with a c but I can' think of the name. How do you make your mojioto in a big batch like that ?
Another side that I always make for parties and I will probably make it this weekend is pasta & broccoli with garlic and olive oil. I love it because it is a one pot dish and it tastes best room temp so you can make it early. I use Barilla Plus pasta because I think it takes much better than regular pasta in the this dish. I also use frozen broccoli florets. Less time consuming. So once the pasta is half way done cooking I throw the broccoli in then let it cook until the pasta is done. Drain it and I use A LOT of minced garlic. If I make one box of pasta I will use 7-8 cloves of garlic that I put through the press. It seems like a lot but isn't. I saute that in some olive oil. Once the garlic is sauted I throw the pasta and broccoli in and some salt and pepper to taste and that is it. It is probably done in 20 minutes an that includes boiling the water.

the drink you are talking about is a caipirinha. they are so good with grilled meats (think a brazilian steak house YUM!) but to me are stronger than mojitos. you may be having overnight guests if you make those
I make a large batch of mojitos by essentially making MANY small batches and then adding them together. usually I do them individually, but I don't have that kind of stamina this year (also, I don't get to taste, so it takes part of the fun away ) I'll have extra limes and mint on the side along with an ice bucket.
thank for the reminder though...I wanted to make grilled corn!!!!!

Re: Memorial Day Cookout/welcome home party
still finalizing menu, but very similar to both of yours...
my issue I struggle with is when you want to grill everything, hams, hots, sausage, beef chix, then corn and veggies or whatever... there is no way to have everything done and remain hot at the same time.
anyone have a secret?
because my guests will eat everything piece meal off the grill and then I find they are stuffed for the goods that come later!
I do know the party drink will be Pomegranate blueberry martinis, I did the Mojitos last year with mint from the garden... so good!
MENU
Apps: salsa and chips (blue and white corn) pretzels crudite and dip grilled Keilbasa cheese, crackers, grapes
Main: Hot dogs Hamburgers either - grilled chicken, crock pot meatballs or chicken marsala if I am not busy...ha
Sides: Arugula, cran and walnut salad broccoli salad cole slaw
Dessert: bday cake fruit salad "Mud" pudding

Re: Memorial Day Cookout/welcome home party
I want to come to that party! And I neeeeeeeed to know what is in a Luger burger!
I would use the shrimp kebab as an appetizer and add chicken - either bbq or breasts marinated in lime/garlic - to the entrees.
I am not having a 'traditional' BBQ this year because my son requested Spanish food for his 8th bday. Here's our menu:
Appetizers/Tapas
Grilled Shrimp Skewers with garlic and lime Radishes in olive oil dusted with coarse salt Bacalao fritters with spicy Aioli Ajillo Mushrooms Salad of Red Onion and blood oranges Pan fried Chorizo Corn on the Cob with lime and red pepper Rustic Bread with Olive Oil (for dipping) A wedge of Manchego and a hunk of Bleu cheese Warm Potato ‘Salad’ with Saffron, Serrano ham and Peas
Entrees
Paella Turkey Chili and plain yellow rice for the littles.(and anyone else who doesn’t like seafood) Hamburgers for my *I hate anything seasoned with more than salt* FIL
Dessert
Coyles Banana Split Cake Fried dough with cinnamon and powdered sugar
Specialty drink:
White Sangria

Re: Memorial Day Cookout/welcome home party
thanks for your help everyone!
the menu has been decided. my friend is making shrimp ceviche, so seafood will be covered in appetizers.
I decided on marinated whole steaks and chicken kebabs.
I hope everyone has a GREAT summer kickoff.
