Menu plan?

I’m a hot mess this week. Yesterday we had takeout. Tonight I’m making salsa chicken in the instant pot and putting it over quinoa and roasted corn like a burrito bowl. Tomorrow I think I’m going to make chicken and asparagus stir fry assuming my asparagus is still good.

Menu plan?

Having trouble sticking to my plan lately but hopefully getting back on track.

Monday - pizza
Tuesday - balsamic brown sugar glazed pork loin, mashed potatoes, green beans
Wednesday - corn and zucchini chowder with cheddar biscuits
Thursday - orange grilled chicken, brown rice, broccoli
Friday - leftover soup with salad
Saturday - spinach salad topped with leftover grilled chicken

I'm on my own this week, DH is in Florida with a friend.
So my meals have been whatever I feel like eating.
Sunday I did cook chicken cutlets, a piece of salmon, a pot of lentils, good for two meals each.

So much easier when cooking for one !

We've been away so that means I've been eating like I have 2 assholes and with reckless abandon. Boozing as well. Chat Icon

So tonight DH is making zoodles and I'll make my famous clam sauce to go over them.
I normally don't do zoodles, but I am so bloated from this week that I need to eat light for a few days!

Tomorrow we will get take out
Saturday going out to dinner

Sunday probably BBQ and pool

It was Polish week last week here at the local Lidl (you guys are getting one soon!), so I‘ve eaten Pierogi and cabbage rolls all week. It switched to French week this week, so I got some nice cheese and a quiche for tonight.

I think I actually got it from a past poster here years ago, and it has become my go to.
Everyone loves it and it's easy


Lick Your Plate Clean Linguini & Clam Sauce

Ingredients:

4 cans (10 ounces) whole or chopped baby clams (of course can use fresh, if comfortable handling them)
2 Tablespoons olive oil
1 Tablespoons butter or margarine
1 garlic clove, finely chopped (more if you want, I always add more) plus a few whole cloves
1 container of baby bella or white mushrooms, sliced ( I omit this as DH does not like mushrooms)
1/4 tsp crushed red pepper (more if you want more heat)
1/4 cup dry white wine (not cooking wine) (but I usually use more- like almost 1/2 the bottle and reduce it down, gives it more flavor)
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp coarsely ground black pepper
1 package (16 ounces) linguini or spaghetti (or zoodles if you have been on vacation and need to just stop with the carbs. Chat Icon)

Vegetables are optional I always cut up a zucchini and use that in it, but you an use peas, broccoli, asparagus or anything you want to add. Or nothing at all if you're a clam sauce purist. Chat Icon

INSTRUCTIONS
Drain clams, reserving liquid. In nonreactive 2-quart saucepan, heat oil and butter over medium heat. Add chopped garlic, mushrooms, and crushed red pepper; cook until garlic is golden. Add whole garlic cloves, wine and cook until liquid has reduced slightly, about 2 minutes. Add reserved clam liquid; heat to boiling. Reduce heat; cover and simmer 10 minutes to blend flavors. (At this time you can add chopped broccoli &/or asparagus. zucchini, etc to cook to a bright-green crisp). Add clams and cook, stirring occasionally, until heated through, 2 to 3 minutes. Stir in parsley, salt, and pepper. Meanwhile in large saucepot, cook pasta as label directs. In warm serving bowl, toss pasta with sauce.

Made it last night and it was delicious. It even made the zoodles tolerable.

But it really does taste best with a big pile of linguine and some crusty break to soak up the extra sauce!
