My first family get together at my house- and it's EASTER!
I was supposed to have an easy lunch - I had it all planned. And then two of my nieces got sick. So now....it's postponed until EASTER!! I certainly couldn't get away with a simple lunch.
Any ideas for a complete novice?

Prep everything the day before and assemble so that way you can just cook it that day.

Do they eat ham or lamb or lasagna? what are your traditions? I have a killer lamb recipe--its easy not intimidating-we do not do ham... I posted awesome brunch recipes if you do a fancy brunch...

I am hosting Easter too but I am doing all my prepping on Saturday & then Sunday I can just cook it all. We are doing stuffed shells, macaroni, meatballs & sausage..

I am not a ham person.
So I think this year I might do lasagna because it's easy...my Due date is the next day (if I had not delivered already).
My mom will be here visiting so maybe she will help me make a roast.

My first big get together was Christmas -- with both my parents AND all my in-laws. I feel your pain.
I have SUPER simple recipes for the following. FM if you want them:
Filet mignon (or silver tip, which is just as good, but less expensive)
Roasted pork tenderloin
Roated spiced sweet potatoes
Also - mashed potatoes are easy and always a crowd pleaser!
Buy the boil in a bag vegetables. They're really good. (I normally eat only fresh or frozen veggies with no butter / toppings, but I do the boil in a bag for company... It's easier and they taste good.)

are you good at making sauce? lasagna is easy to put together once you have a batch of sauce made....
or ravioli....
spiral ham is sooo easy, there's no prep and they'll on be on sale for Easter!
you can have
ham asparagus (soo easy to steam) scalloped potatoes (I have a good recipe, but you can even do boxed) rye bread....

I can only handle things I can do in advance .........Lasagna with meat sauce, Eggplant Parmigiano, Meatballs and sausage (sp?) A big antipasto, lots of Italian Bread, a huge tossed salad ...........
Everything but the salad can be prepared and 'assembled' the day before and still taste great the day of .......

Ham, cheesy potatoes, salad, deviled eggs, veggie tray, corn, and a meat/cheese tray. You'll be fine. It's really not as bad as it seems. FM if I can help. My 1st hosted holiday was Thanksgiving and then we did Christmas too!

lasagna is a great meal to prep in advanced and heat up the next day with some warm garlic bread.
Make desserts and salads the day before and just cover and put in the fridge.
