need a GREAT cookie recipe for someone with diabetes
my neighbor is 92 and has diabetes. last year she said she would love some cookies, but then got sick for several weeks around christmas so i didn't get to make them.
i know i can find any old recipe, but does anyone have a really great (and hopefully easy!) recipe?
it could be as simple as chocolate chip cookies.

THis Paula Deen peanut butter cookie recipe is AWESOME! Very easy to make! Diabetic friendly! I make them at least once a month!
Ingredients 1 cup peanut butter, creamy or crunchy 1 1/3 cups baking sugar replacement (recommended: Splenda) 1 egg 1 teaspoon vanilla extract Directions Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

My dad and brother are diabetic and what my mom usually does is take a normal cookie recipe (any one that you love) and replace the sugar with Splenda. Splenda also makes brown sugar, so if you want to make chocolate chip cookies, you would use the Splenda Brown sugar replacement. Also, look for sugar free chocolate chips in the baking section.

thank you! that sounds great! stupid question--but doesn't peanut butter have sugar? or natural sugar? i just don't want to make the poor woman sick

that helps a lot! how do i know when to use the splenda brown sugar vs the regular sugar?

I am Diabetic and have no problem with peanut butter. 2 tablespoons only has 3 grams of sugar.

I am diabetic also and peanut butter does not bother me in the least. Ther eis sugar free peanut butter out there also, or low carb pb out there if you rather use that.

the market has a splenda pastry book try n get ur hands on it
my grandma uses her regular recipes but adds splenda instead but remember splenda is sweeter so dont use as much as sugar
ps think u are doing something really special
