I make pulled pork in my crockpot and dh loves it. And it's ridiculously easy.
Pork shoulder Sliced onion Can of wild cherry Pepsi (some people use root beer) Cook on low for 6-8 hours
Shred pork, drain and add a bottle of sweet baby rays BBQ sauce

I made this the other day and it was yum and different. I didn't have molasses, so I just used brown sugar.

I would just cook the pork in the crockpot and then add whatever sauce you want.
99% of the recipes are with BBQ sauce but you could use a soy based sauce or something chili based. I would just Google sauces and go fro there.

I hate BBQ sauce or anything like it, but I love pulled pork. I make a version that I serve with peppers and onions (almost like an italian sausage and peppers), that would work well with fajitas.
I rub the pork butt with a dry rub of salt, pepper, garlic, onion and any other seasonings i have that I feel like. nothing fancy. Then I wrap the whole butt in a weave of bacon and cook low and slow in the oven. It is so juicy and flavorful you don't even need to add sauce to it. The only down side is it takes a long long time to cook!

I make a crockpot chicken recipe with McCormick Mexican Fiesta seasoning, Salsa and Apple Cider vinegar in the crockpot. The packets of seasoning/marinade are in the aisle where the gravy and mashed potatoes are. I'm sure you could do this with pork.
