Need a recipe! I am cooking for friends tonight
She doesn't eat pork. My husband doesn't eat seafood. I am going to buy everything after work tonight.
Please help with suggestions!!

I would stop at a butcher on the way home, they have a lot of stuff pre-marinated so it helps with prep. My 2 kind of quicker meals for guests midweek is marinated turkey london broil (again, premade from the butcher) or stuffed chicken breasts (premade from the butcher or easy enough to do yourself). I do the stuffed chicken breasts 2 ways, fresh mozzarella & spinach or just bread stuffed. The marinated filet mignon skewers are always a huge hit. London broil is always simple & can allow them to dress up with sauces & sides… Chicken Cordon Blue is good, but not sure if HAM qualifies as pork in your case… LOL. Again, everything is available from the butcher pre-prepped, you just need to cook it. Good Luck!

I made this the other night..I served it with rice but mashed potatoes would work very well too.
It's SUPER SUPER EASY and friggin awesome.
roast beef with dijon-caper sauce
I used a heavy cast iron pot/dutch oven.
make sure you use LOW SODIUM broth..you can always adjust for salt.
have a nice time.
ETA: I've also made this for dinner and then awesome sandwiches au jus the next day. HEAVEN..with melted extra sharp cheddar cheese!
actually, the first time I made this was right before I found out I was preggo. I am not a big beef person at all, but I made this and for two days was licking my plate..my arm...ANYTHING that had this meat and sauce on it. now I know why

I think steak is the way to go. I'd probably pick up a few good quality steaks (porter/rib) and season them with Montreal seasoning or just some salt & pepper and throw them on the grill.
I'd oil and salt some baking potatoes and wrap them in foil and toss in the oven for your carb. Have a dish of sour cream and some chopped chives on hand in case they want to top them.
For a veggie I'd do Hayley's burnt broccoli. It's delicious and it's impressive on limited time.
Maybe a big green salad just because.
If you want them to snack on something while you cook, you can put out a fresh made basket of quick focaccia. Buy pizza dough from a pizzeria, roll it onto a cookie sheet, brush on olive oil and toss on some thinly sliced onion, some slivers of garlic and some sliced tomatoes. Bake until golden and then toss on a handful of Reggiano while it's hot. Slice and serve with a dish of good Olive Oil to dip. Or do a store bought veggie crudite.
Dessert would definitely be store bought on short notice - a berry cheesecake or a mocha cake would go nicely.
Wine is a nice shiraz.

Thank you so much ladies! I made Chicken Tetrazini because my guests were running late and I didn't want something that was time sensitive. It was fantastic!
I am saving the ideas from this thread for my next dinner
