I made spaghetti squash with meat sauce last night and OMG! It was amazing!

I use the George Foreman grill a lot and I've been making shish kabobs with beef or chicken and adding mushrooms, peppers, onions. I season with olive oil, lemon, pepper and a little sea salt.

I make burgers with bib or butter lettuce in place of buns.
Lettuce wraps with chicken or fish. I made it with Trader Joe's Mahi Mahi last week and my BF was going nuts over it!

They are DELICIOUS and she calculates all of the WW points plus for them.

i'm making chicken tenders and brown rice with corn for DH. i'll eat rice, corn and a salad... i don't eat meat and don't feel like cooking something seperate for myself tonight.

Escarole and Bean Soup:

Ingredients:
2 tablespoons olive oil
2 garlic cloves, chopped
1 pound escarole, chopped
Salt
4 cups chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed well
Freshly ground black pepper

Directions:
Heat olive oil in a heavy large pot over medium heat. Add the garlic and saute until fragrant, about 15 seconds. Add the escarole and saute until wilted, about 2 minutes. Add a pinch of salt. Add the chicken broth and beans. Cover and simmer until the beans are heated through, about 5 minutes. Season with salt and pepper, to taste.

Italian Spinach Pie

Ingredients:
1 16 oz container 2% Cottage Cheese
10 oz frozen chopped spinach, thawed, very well drained
1 cup Shredded Mozzarella Cheese
4 eggs, lightly beaten
7 oz. roasted red peppers, well drained, chopped (optional)
1/3 cup Grated Parmesan Cheese
1 tsp. dried oregano leaves

Directions:
Preheat oven to 350 degrees F.
Mix all ingredients until blended
Pour into a lightly greased 9 inch pie plate
Bake 40 minutes or until the center of the pie is set

Squash Souffle:

Ingredients:
3 eggs
12 oz frozen butternut squash
1/2 cup of sugar
1/2 cup of flour
1/2 stick of butter softened
1 cup of milk
cinnamon to taste (I leave it out b/c I do not like it)

Directions:
Preheat oven to 350 degrees F
Defrost squash
Beat eggs then add to squash
Add dry ingredients
Add milk
Mix until ingredients are blended
Pour into a 9x9 pyrex pan
Bake 40-45minutes until edges are golden brown

I love the squash souffle. I have never served it as a dessert but I have used it for brunch.
