Need ice cream cake making help (decorating)

I want to make a Minnie mouse shaped ice cream cake.

Any ideas on how to make the outside dark? I thought maybe hot fudge you can buy in the store. Do you think it would stay on, or do you think it would slide off?

Any ideas?

I would think that fudge would fall off. What about chocolate crunchies like they put in the middle of carvel cakes or chocolate cookie crumbs. There's also the chocolate shell topping they sell for ice cream but I don't know how easy that would be to do?

I think the fudge would not work. You can make the frosting black or you can use chocolate sprinkles or the chocolate crunchies from carvel.

I didn't think of the crunches or even sprinkles. GOOD idea! I was going to put that in the cake, so outside works too. Maybe I'll trial it out 1st....I have time

I was thinking about using a springform pan as the head & I have a mini ones for the ears.

I made a dark choco ganache. I made big sugar cookies on put long skewers in them and covered in the ganache. I made marshmallow fondant and made the bow.

I think you can use fudge but you should not heat it up. Carvel uses fudge on the top of some of their cakes.

Very cute, but I wanted to do an ice cream cake. So I was going to use round springform pans.

I like the sprinkles or crunchies idea, but also ganache. It's thicker than fudge so you won't have a problem of it sliding off the cake and you can adjust the consistency yourself and it works great with ice cream.

Nope. You might be thinking of using right when it's warm. You can actually let the ganache cool down and even whip it to incorporate some air to make it lighter. What I would do though, is adjust the amount of cream to the ganache to make it a little more fluid so that it is easier to spread on the ice cream cake. When you put it back in the freezer, it'll set up even more but won't be rock hard.

Once you ice your ice cream cake with ganache and put it in the freezer, it will firm up but won't be rock hard. If you just leave the cake out for a few minutes before cutting (we usually do this to make it easier to cut), the ganache will soften a little bit.
