Need some meal ideas for this week - I'm in a food rut
I feel like the past few weeks I keep making the same dinners on repeat. I'm in such a rut! I need some inspiration...what are some meals you ladies have been making lately??

Last night we had grass fed burgers(no bun) with home made guacamole and roasted brussel sprouts. The night before we had pasta with chicken. My husband made the beef stew from America's Test Kitchen and it was awesome

Need some meal ideas for this week - I'm in a food rut
We had pasta and meatballs earlier in the week. Then meatball subs another night with the leftovers. Last night was a chicken stir fry with veggies, pineapple, and rice noodles.
I'm haven't made the ST greek turkey meatballs in a while so I plan to make that soon. Also planning to make a lasagna this weekend and maybe a sauteed shrimp with lemon, spinach, grape tomatoes, and feta.

I usually check out Pinterest for new ideas when I'm in a rut. Here are some recipes I've made recently that we really enjoyed:
Angel Chicken
Crispy Onion Chicken
Chicken Madeira
Cheesy Honey Mustard Chicken
Crescent Cheeseburger Ring <- This is really an appetizer but I serve it with fries or a baked potato to make it a meal since DH loves it!
Pretzel Chicken
As you can see, we are big chicken fans! LOL

Made these recently
Rosted Peppers, Chicken & Sausage (I used turkey kielbasa instead of sausage)
Pan Roasted Chicken with Lemon Garlic Green Beans & Potatoes
Sweet Baby Ray's Crockpot Chicken 4-6 chicken breasts 1 btl Sweet Baby Ray's sauce 1/4 c vinegar 1 tsp red pepper flakes 1/4 c brown sugar 1 tsp garlic powder Mix everything but chicken Place chicken in crockpot (frozen is ok) Pour sauce mixture over chicken Cook on low 4-6 hours
Turkey Chili (or beef)
Mexican Meatloaf Mix salsa & tostitos with ground turkey (or beef). Form a loaf and bake
Spaghetti sauce & pasta (Make a lot and freeze for another time)
Baked Ziti
My all time fav - Taco Cupcakes Can do ground turkey or beef

Baked ziti and meatballs Chicken soup with gluten free matzo balls Grilled steak with roasted carrots and escarole sautéed with garlic and olive oil Roasted chicken with roasted Parmesan asparagus and mashed potatoes Shrimp scampi

Monday night we had kitchen sink pasta, using leftover ground beef, sauteed eggplant, mushrooms and sauce. I added in spinach for myself. Tuesday, chicken cutlets with corn on the cob, mushroom knish for DH and tomato salad. Wednesday, veal chop with rice pilaf, buttered peas. Tonight is sandwiches or knockwurst with sauerkraut and pierogie.
Baked ravioli with garlic bread and salad is one of DH's favs. Kitchen sink frittata is another favorite. Either pasta or potatoes with eggs, any veggies that I might have leftover, and/or italian sausage or bacon.

I recipe lurk on some of my favorite food network shows websites while I'm at work on Friday (Pioneer woman, Bobby Flay, Sandwich King, Ina Garten or if i'm dieting than skinnytaste etc.) I then choose 5 meals I think sound amazing, do my online shopping order with the ingredients from those recipes and try to cook/prep as much as I can Sunday to have the meals during the week. Just did the chicken cordon blue casserole on Monday night and even had my parents over and everyone LOVED it.

I do something similar to this -- I look at my food magazines, cookbooks, blogs, pinterest, etc, and choose a few recipes a week to try out (I mix new ones in with tried and true ones), and then do my grocery shopping according to my meal plan.
Two nights ago, I made Skinnytaste's Eggplant Parmesan recipe, because we had eggplants that we grew in the garden and I had sauce in the freezer and mozzarella in the fridge. So I had a lot of the ingredients on hand. It was really good, though!
Tonight, I am trying out this "Easy Honey Mustard Mozzarella Chicken" from www.piarecipes.com (found on Pinterest).
4 skinless boneless chicken breast halves 3/4 cup honey 1/2 cup prepared mustard lemon pepper to taste 4 slices bacon, cut in half 1 cup shredded mozzarella cheese
Preheat oven to 375 degrees.
Place chicken breast halves in a baking dish and drizzle evenly with honey and mustard. Sprinkle with lemon pepper
Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking10 minutes or until chicken juices run clear, bacon is crisp, and cheese is bubbly.
I will serve with steamed green beans and roasted butternut squash cubes.

This week we had: Chicken in a white wine sauce with rice and steamed green beans Breaded pan-fried pork chops with shells and sautéed spinach Chicken fajitas with green pepper & onion, homemade guacamole, on multigrain tortillas “fried rice” with the leftover rice, onion, carrots, green pepper, and egg
Tonight, I think the plan is London broil, sweet potatoes, and roasted zucchini.
