OMG...I forgot to post a review...I made a Deceptively Delicious recipe! Recipe included!

I made the Macaroni and Cheese...and it was...

I added in a LOT more cheese than the recipe called for, but my goodness...it was delish!! My older son had 2 HUGE bowls!! And the whole time I was thinking, "eat up little man...you're eating butternut squash!! Chat Icon " Chat Icon

Here's the recipe, for those interested:

Macaroni and Cheese:

1 1/2 cups elbow macaroni (I used a pound)
Nonstick cooking spray
1 tablespoon olive oil
1 tablespoon all purpose flour
1/2 cup nonfat (skim) milk- (I used 1%)
1/2 cup butternut squash or cauliflower puree (I used the butternut squash and pre-pureed and froze everything. Just defrosted it before preparing this meal)
1 1/2 cups shredded Cheddar Cheese (I used about 1/2 of a bag of shredded cheddar)
4 ounces nonfat cream cheese (mine wasn't reduced fat, but whatever)
1/2 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper


1. Boil the pasta to desired tenderness.

2. While pasta is boiling, coat a large frying pan with cooking spray and heat over medium heat. Add the oil, then the flour, and cook, stirring constantly, until the mixture resembles a thick paste but has not browned, 1 to 2 minutes.

3. Add the milk and cook, stirring every now and then, until the mixture begins to thicken, 3 to 4 minutes. Add the vegetable puree, cheddar, cream cheese, and seasonings. Stir until cheese is melted and the sauce is smooth. Stir in the macaroni and serve warm.

I swear...it was great. You didn't taste the squash AT ALL!!

If you use white cheddar, use the cauliflower puree so it's camouflaged.

It really was good. Enjoy!!

I will. I think next up will be the chicken nuggets or one of the Mexican dishes (quesadillas, tortillas or tacos).

I have to try this, but Ryan is sooo picky I dont know if it will work. He likes mac-n-cheese but only from the box, he wont eat it homemade
