Oven fried chicken?
Any good recipes for a healthier "fried" chicken recipe that bakes in the oven? Looking for a yummy crunchy one! TIA!

Oh and I don't use peanut oil. I use vegetable oil and it's delicious! The kids go crazy for it!!
The coleslaw she posts about is really good but I only make like 1/8 of the dressing!

Yes, I'd do the same (allergic to peanuts). ALso, have you ever done it with boneless/skinless breasts? I was thinking about cutting them up like nuggets? Lastly do you use the cajun seasoning? I don't have it and wonder if I should use something in its place. Thanks!

I used whole wheat breadcrumbs and whole wheat pancake mix to coat the ones I made a few weeks ago. They were delicious!
I didn't follow a particular recipe though; I tend to make things up as I go.

If you're trying to make good baked nuggets, i do a good one that gym kids gobble up. My older DS swears they're better then McDonalds. All I do is mix panko bread crumbs with a bunch of a Parmesan cheese. Instead if flour and egg, I dip the chicken into melted butter and then right into the bread crumbs. Bake until browned a crispy. The kids like then with BBQ sauce, I like mine with buffaloe said and blue cheese dressing. Yum!
