For anyone who makes chicken in the oven..quick question..
I know this should be on recipes but I dont have time for it to be there right now..way more traffic here..
I am making lemon chicken tonight with roasted potatoes. I bake it in the oven but it always comes out so dry. I use lots of lemon juice and evoo..and it still turns out dry. Anyone have any suggestions on how to make sure it comes out juicier?? TIA

Cover it with tin foil and take the foil off the last few minutes so it browns.

youre cooking them too long
if you are ok with slicing one open, look at the inside. when its juuuuuuust turning from pink to beige inside, take it out and let it sit for 10 minutes covered.
chicken continues to cook long after you remove it from heat
25 minures at 350 should be the max you cook it
also are you pounding thme thin? thicker cutlets are alot more juicy

LEMON PEPPER CHICKEN
2 lbs. chicken, cut up 1 tsp. butter flavoring 1/2 c. butter 1/2 tsp. garlic powder 2 tsp. lemon pepper
Melt butter and butter flavoring together; pour over chicken; sprinkle with garlic powder, salt and lemon pepper marinade. Bake at 350 degrees, uncovered, for 30 minutes. Serve with rice.

Marinating them in lemon juice and breading them helps.
I dip them in egg (or just egg whites) and then breadcrumbs before I put them in the oven. It seems to help keep them from drying out.
