You know what, I make a spinah and feta pie, minus the crust with some matzoh meal to bind and everyone gobbles it up..I try to make "regular" things that don't use bread to stay away from the gross tasting things...My MIL used to buy the most g-d awful things ready made, I've opened her eyes to a new world of cooking edible things for Passover...

i agree-good and passover don't belong in the same sentence! I have a low carb cheesecake recipe somewhere-it uses nuts in lieu of graham crackers.

Peach Kugel
1 pound matzoh farfel Boiling water 1 (16 ounces) can sliced peaches, undrained 7 large eggs 1 cup margarine, melted 1 cup sugar 2 tablespoons, vanilla extract or 2 packages vanilla sugar Sugar Ground Cinnamon
Preheat oven to 350.
Place farfel in colander. Pour boiling water over farfel; drain and put aside.
Drain peaches, reserving liquid.
Beat eggs in a large mixing bowl until well blended. Beat in margarine, sugar, vanilla, farfel and reserved peach liquid. Cut in several peach slices.
Pour into a greased 13x9 baking pan. Place peach slices on top, pressing down slighty into batter to prevent burning. Sprinkle with sugar and cinnamon.
Bake, uncovered, for 1 hour.

I've made this strawberry mousse a few times. Very yummy!
1 egg white 1/2 cup sugar 2 cups chopped fresh strawberries
Place egg white in a large bowl or mix powdered egg whites with 1/4 cup warm water in bowl. Whisk for 2 minutes until light and foamy.
With a hand mixer, gradually beat in sugar and strawberries on medium speed. Increase speed to high and beat for 15 minutes. Mixture will fill the bowl.
Transfer to a bowl and freeze for 4 hours.

Potato Frittata
SERVES 4 ACTIVE TIME: 20 min TOTAL TIME: 20 min
2 Tbsp Lucini Extra-Virgin Olive Oil 2 cups onion, chopped 1 lb all-purpose potatoes, 1/4-inch dice Salt and pepper to taste 3 Tbsp Breakstone's Whipped Butter 8 large Egg-Land's Best Eggs, lightly beaten 2 Tbsp snipped fresh chives 1 Tbsp snipped fresh cilantro 4 oz Les Petite Fermieres Shredded Pizza Cheese 1/2 cup Gold's Salsa, warmed Add All Ingredients to List
Heat oil in large skillet on MEDIUM-HIGH, until oil faintly smokes. Add onions; cook, stirring, 2-3 min, until soft but not brown. Add potatoes; cook 10-15 min, until potatoes are fork tender, turning occasionally to brown all sides. Season to taste with salt and pepper. Add butter. When butter begins to melt, gradually add eggs, folding in with rubber spatula. Cook, stirring occasionally, 2-3 min, until almost set. Add chives and cilantro. Spread potato-egg mixture evenly to cover bottom of pan; sprinkle with cheese. Cut into wedges; serve with salsa.
Chef Tip(s): Choose Kosher for Passover ingredients to ensure that this recipe is appropriate for your Passover table.

I know it might not sound that good, but matzah drizzled with melted chocolate, caramel and a little sea salt is delish... sweet/savory dessert.

Arrange matzahs in a single layer on baking sheet. Combine 2 sticks of salted butter, 1 cup brown sugar, 1 tsp vanilla in small pot and bring to boil over medium heat. Boil for 4 minutes, stirring occasionly. Remove from heat (you can add chopped pecans if you want to). Pour mixture over matzahs and spread evenly. Bake at 350 for 10-14 minutes or until it bubbles. Cool completely. When cool, melt chocoalte in double boiler or in microwave. and drizzle over matzah. let cool. Its DELICIOUS!
Last year someone posted a brownie recipe that I used and that was really good also, didnt taste at all like "passover" brownies!

My mom makes something similar to this - it's insane!!!

Chicken Pot Pies
SERVES 6 ACTIVE TIME: 1 hour 0 min TOTAL TIME: 1 hour 55 min
1 cup + 9 Tbsp Manischewitz Cake Meal, divided 1 Tbsp sugar 12 Tbsp margarine, divided 1/2 cup water Meat from 1 plain, unseasoned rotisserie chicken, cut in bite-size pieces 12 spears asparagus, cut in 1-inch pieces 8 oz baby carrots 8 oz parsnips, peeled, chopped (about 2 cups) 8 oz white turnips, unpeeled, chopped (about 2 cups) 8 oz red creamer potatoes, quartered 1 tsp dill weed 1 1/2 tsp tarragon 2 cups chopped onions 1 carton Food You Feel Good About Chicken Culinary Stock 1 egg, slightly beaten Add All Ingredients to List
Preheat oven to 375 degrees. Prepare pastry by combining 1 cup cake meal, sugar and 6 Tbsp margarine in food processor; process until well blended, 25 to 30 seconds. Add water and process until dough comes together. Set aside. Blanch asparagus 2-3 min in large pot of boiling salted water, until crisp-tender. Drain; transfer to bowl of ice water. Drain and set aside. Following same procedure, blanch carrots 3-4 min; parsnips 3-4 min; turnips 3-4 min; potatoes 10-12 min. Remove and discard skin from chicken. Remove meat from chicken; cut in bite-size pieces. Combine chicken, asparagus, carrots, parsnips, turnips, and potatoes in two 2-quart (8x8-inch) baking dishes. Sprinkle with dill weed and tarragon; season to taste with salt and pepper. Melt remaining 6 Tbsp margarine in large saucepan on MEDIUM-HIGH; add onions. Cook, stirring, 3-4 min. Sprinkle with 9 Tbsp cake meal, stirring until well blended. Gradually add chicken stock; heat to boiling, whisking occasionally. Simmer 10 min. Pour over chicken and vegetables. Cut 2 pieces of wax paper about 9 inches by 18 inches. Roll out pastry dough between the 2 sheets of wax paper to 1/8-inch thickness and approximate shape of the 2 dishes. Cut the rolled-out pastry in half so there are now 2 9x9 inch pieces. Peel the top piece of the wax paper off, and then invert the pastry dough on top of the chicken and vegetable mixture. Peel bottom piece of wax paper off. Arrange pastry on top of chicken and vegetable mixture, tucking in edges Brush with beaten egg. Cut slits to let steam escape. Bake 45 min, until golden brown.
Chef Tip(s): Cake flour makes this dough fragile, so rolling it between wax paper helps keep it together. Parchment paper can be used in place of wax paper. Choose Kosher for Passover ingredients to ensure that this recipe is appropriate for your Passover table. Calories: 590
