GOOD Passover recipes - PLEASE SHARE!
IMO, Passover food just sucks - yeah I said it. Same crap year after year - matzah balls, gefilte fish, a turkey or a brisket and those G-d awful jelly rings or marshmallow twists. Oh and don't get me started on macaroons. I hate it all.
Anyway, for those of you who celebrate the Passover holiday, why not have a thread for our favorite non-boring Passover dishes?
Oh and good luck to all of your digestive systems. You have to have intestines of steel to make it through that week!!!

This is my mom's recipe for Passover Rolls. I've had them on the side with a meal, or even made a sandwich from them.
Passover Rolls
2 tsp matzo meal 1 cup water 1/2 tbsp vegetable oil 1 tbsp sugar 1 tsp table salt 4 eggs (or 1 cup egg beaters)
Add salt & sugar to matzo meal. Bring water & oil to a boil. Add oil & water to matzo meal and mix well.
Add eggs to mixture, beating well after adding each one.
Let stand for 15 minutes.
With oiled hands form into 12 rolls and place on a greased cookie sheet.
Bake at 375* F for 50 minutes until golden brown.

Here's a dessert recipe for chocolate mandelbrot (sp?) I've gotten rave reviews on these
INGREDIENTS
* 2 cups white sugar * 1 cup pareve margarine * 6 eggs * 2 3/4 cups matzo cake meal * 3/4 cup potato starch * 1/2 teaspoon salt * 1 cup chopped walnuts * 2 cups semisweet chocolate chips * 2 teaspoons white sugar * 1 teaspoon ground cinnamon
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a large cookie sheet. 2. In a large bowl, cream together the 2 cups sugar and margarine until smooth. Beat in eggs one at a time, mixing well after each one. Combine the cake meal, potato starch and salt; stir into the creamed mixture. Mix in walnuts and chocolate chips. The mixture will be heavy. Form into 2 long oval loaves. Place onto the prepared baking sheet. Sprinkle the top with a mixture of 2 teaspoons sugar and cinnamon. 3. Bake for 50 to 55 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean.

My mom has been making these since we were kids, not sure where she got the recipe from but it definitely wasn't anything on line

I love the orange slices! Not sure why b/c most of the food does suck!
I've tried this macaroon recipe from Kraft Foods

I dont like dark chocolate and if they were made from MILK chocolate, Id have to wait 5-6 hours (maybe more) after a meal to eat them.

Peach Kugel
1 pound matzoh farfel Boiling water 1 (16 ounces) can sliced peaches, undrained 7 large eggs 1 cup margarine, melted 1 cup sugar 2 tablespoons, vanilla extract or 2 packages vanilla sugar Sugar Ground Cinnamon
Preheat oven to 350.
Place farfel in colander. Pour boiling water over farfel; drain and put aside.
Drain peaches, reserving liquid.
Beat eggs in a large mixing bowl until well blended. Beat in margarine, sugar, vanilla, farfel and reserved peach liquid. Cut in several peach slices.
Pour into a greased 13x9 baking pan. Place peach slices on top, pressing down slighty into batter to prevent burning. Sprinkle with sugar and cinnamon.
Bake, uncovered, for 1 hour.

I posted this on a thread last week, but here it is again..
They are SOOO GOOOD. I'm not Jewish (my DH is). After eating these, people always try to school me how you cant bake w/ flour at passover. When I tell them they do not have any flour they are shocked.
They taste even better than some regular homemade brownie recipes.
INGREDIENTS 1/2 cup butter 2 (1 ounce) squares unsweetened chocolate, chopped 2 eggs 1 cup white sugar 1 teaspoon vanilla extract 3 tablespoons matzo meal (recipe calls for matzo meal, I prefer the matzo flour) 1/2 cup potato starch 1/2 teaspoon salt 1/2 cup chopped walnuts (optional) 1/2 cup semisweet chocolate chips (optional)
DIRECTIONS Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan. Melt the butter in a small saucepan over medium heat. Remove from the heat and stir in the unsweetened chocolate. Set aside. In a medium bowl, beat the eggs and sugar with an electric mixer for about 5 minutes. Reduce the speed to low, and pour in the chocolate and butter, then stir in the vanilla. In a separate bowl, stir together the matzo meal, potato starch and salt. Use a spoon to stir into the chocolate mixture until well blended. Mix in the walnuts or chocolate chips if using. Pour into the prepared pan and spread evenly. Bake for 25 minutes in the preheated oven, until the brownies are dry on top and begin to pull away from the sides.

Dessert Apple Kugel
My mom, Lynn, loved Passover and this was a recipe she made every year. 4 sheets matzah, crushed 6 eggs 1 ½ cups sugar ½ cup ground walnuts 1 cup raisins ¼ cup orange juice Grated rind of one orange 5 tart apples, peeled, cored and sliced 1 ½ TB.. cinnamon mixed with ¼ cup sugar ¼ cup melted butter or margarine Preheat oven to 350 degrees. Grease 9x13-inch baking pan. Place crushed matzah in a bowl, cover with warm water and allow to soak. Squeeze out as much water as possible by transferring the matzah to a strainer and pressing out the water. Beat eggs until frothy then add sugar and bet well. Stir in drained matzah, walnuts, raisins, OJ and rind. Spread half this mixture to the pan and spread half of the apples over it. Cover with the remaining matzah mixture, then top with the other half of the apples.Pour the melted butter evenly over the top. Bake 45 minutes. Serve warm or at room temp. makes 8 generous servings
Simone Beck’s Chocolate Cake (Food And Wine April, 1994)
This cake is one of the best recipes that I have ever made. My husband is not a chocolate lover but this cake is on our Passover table every year. For my kids, it isn't Passover if this cake isn't on the menu. Cake 2 Tablespoons slivered, blanched almonds ¼ cup sugar 6 ounces German sweet chocolate, coarsely chopped 1 ½ sticks (12 Tablespoons) unsalted butter or margarine 4 large eggs, separated, at room temperature ¼ cup matzo cake meal Pinch of salt Glaze: About ¼ cup slivered, blanched almonds 3 ½ ounces German sweet chocolate, coarsely chopped 2 Tablespoons brewed, strong coffee 3 Tablespoons cold, unsalted butter, cut into bits 1. Make the cake: Preheat the oven to 375. Lightly butter an 8X2-inch round or springform pan. Line the pan with parchment and butter the paper. Flour the pan, tapping out the excess. 2. In a food processor, pulse the almonds with 1 Tablespoon of the sugar until very firmly ground. Set aside 3. Put the butter and the chocolate in a medium, microwave safe bowl. Melt the butter and chocolate in the microwave. Let the mixture cool slightly. 4. In another medium bowl, beat the egg yolks with the remaining 11 Tablespoons sugar at high speed until thick and pale. Stir in the warm chocolate until smooth. Fold in the cake flour and ground almonds. 5. In a large bowl, beat the egg whites with the salt until stiff peaks form. Stir one quarter of the beaten whites into the chocolate mixture; then fold in the remaining whites just until combined. Scrape the batter into the prepared pan. 6. Bake for about 30 minutes or until moist crumbs cling to a toothpick inserted in the center and the cake springs back slightly when pressed. Transfer to a rack and let cool in the pan for 1 hour. Loosen the cake from the sides of the pan with a small knife, invert onto a rack and let cool completely. Remove the parchment paper. (The cake can be refrigerated, covered, for up to 1 day.) 7. Make the glaze: Preheat the oven to 350. Spread almonds on a baking sheet and toast for about 7 min., until fragrant. 8. Meanwhile, put the coffee and the chocolate into a microwave safe bowl. Melt them together. Stir until smooth. Add the butter and stir until it melts. 9. Invert the cake onto a serving plate. Place 2-inch-wide strips of wax paper under the edges of the cake to keep the platter clean. Using a metal spatula, spread the chocolate glaze evenly over the top and sides of the cake. Discard the paper strips. Arrange the toasted nuts in a ring around the top of the cake and refrigerate for at least 30 minutes to set the glaze.
Bertha’s Sponge Cake
This is my Godmother Bertha’s great recipe for Passover sponge cake. It’s the best sponge cake I ever tasted. 1/2 cup cake meal 1/2 cup potato starch 9 eggs (separated) and at room temperature 1 cup sugar 1 1/2 tsp. orange or lemon rind 4 oz. orange juice Preheat oven to 325 degrees. Place egg yolks in larger mixing bowl and egg whites in medium size mixing bowl Beat egg yolks at full speed for 5 minutes, until they turn a pale, lemony, yellow color Add sugar to egg yolks gradually. Add rind and juice and then add cake meal and potato starch gradually, until just combined. Beat egg whites at full speed until stiff peaks form. Gradually fold in egg whites into other mixture, until just combined. Carefully turn batter into oiled two-piece tube pan so that it does not deflate and bake for approximately 1 hour, until a tooth pick comes out clean. Can serve as is, or with strawberries.

try looking up recipes for celiacs (people who can't eat gluten). there is a ton of stuff we are able to make that should be able to be translated into passover food!
I am jewish too. Some of our passovers have been rather interesting, like the fried chicken and potatoes passover just don't use bread crumbs for the chicken!
my hints: just put honey on everything do the mix of apples, walnuts and totally drench it in wine, makes it SOOOO much better! buy chocolate covered matzah, if you are going to it eat, might as well cover it in chocolate. make matzah brai (french toast but with matzah instead), my mom loves this stuff.

Someone told me take Passover pound cake and cook it like french toast- add egg, vanilla, etc, also in the back of cooking light April issue looks like a yummy receipe for passover rolls. HTH PS I dislike Passover food too!

I found this recipe for brownies on allrecipes.com that just uses Matzah Cake Meal, without the potato starch. Made them for the 1st seder and everyone raved!
Passover Brownies
INGREDIENTS
5 eggs 2 1/2 cups white sugar 1 1/4 cups vegetable oil 1 1/4 cups matzo cake meal 1 1/2 cups unsweetened cocoa powder 1 1/4 cups chopped walnuts
DIRECTIONS
1. Beat eggs and sugar. Add oil. Mix in cake meal and cocoa. Add nuts (or use the nuts as a topping).
2. Bake in a greased 9 x 13 inch pan at 325 degrees F (165 degrees C) for 35 minutes. The secret to moist brownies, Pesach or otherwise, is to underbake them. Check them at 30 minutes. I also put nuts on top rather than in the brownies for two reasons: They make the top look good without having to frost them and, for those who don't or can't eat nuts, they are easily removed without having to search for them
NOTE: My family isn't a fan of nuts in brownies, so I added about 1 cup of chocolate chips. I couldn't find any "Kosher for Passover" ones and my family isn't super strict so I just used regular Nestle ones.

I converted this cupcake recipe to be Kosher for Passover. They are sooooo yummy!!!!!!!!!
Rich Chocolate Cupcakes
1 cup matzoh cake meal 2/3 cup baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butter, softened 1 1/2 cups sugar 2 large eggs 1 teaspoon vanilla 1 cup milk
Preheat oven to 350ºF. Paper-line 12 muffin cups.
Combine flour, cocoa, baking soda and salt in small bowl.
Beat butter, sugar, eggs and vanilla extract in large mixer bowl.
Gradually beat in flour mixture alternately with milk.
Spoon 1/4 cup batter into each muffin cup.
Bake for 18 to 20 minutes or until wooden pick inserted in center comes out clean.
Cool in pans for 5 minutes; remove to wire racks to cool completely.
Makes 12 cupcakes.

I toss the apples and apricots into the food processor, and add them to the mixture. Even my little cousins (ages 4 and under!) loved it.

I needed to bump this thread to say thank you so much for sharing this brownie recipe!
I made it yesterday for the Seder & no one believed me that it was Kosher for Passover!!!
I'm actually making it again this afternoon to bring to the 2nd Seder!
When I made it, I omitted the Potato Starch and just used Matzo Cake Meal (1/2 cup + 3 tablespoons). I didn't use any nuts, but I did add the chocolate chips.
Totally can't wait to try it after the holiday is over with real flour. I can only imagine how much better it will be then!
